Heat a cast iron skillet or heavy-duty saucepan low-med heat.
In a mixing bowl add flour, cornstarch, seasonings, and veggie broth. Stir until batter is smooth. Place panko bread crumbs into a small mixing bowlbowl,
On a 1/2-sheet pan, lay out all mushrooms in whole clusters; add, if desired salt and pepper to taste. desired,
Dip each cluster into wet batter, then panko crumbs. Add to a medium-heated pan. Cook for 2-3 minutes., 2-3 at a time, do not crowd the pan. Cook both sides until golden brown.
Place cooked chicken on a plate with a paper towel or cookie tray to cool. When cool, toss in hot sauce.
Optional: add coleslaw, lettuce, tomatoes, red onions, or dill pickles to your sandwich.
