Crispy Chick'n Nuggets

Ingredients
  

  • 2 cans jackfruit in brine
  • 2 cups Just Eggs 
  • 1 1/2 cups cups all purpose flour (Bob’s Redmill)
  • 1/2 cup 1/2 almond flour
  • 2 tbsp old bay seasoning 
  • 1 tsp paprika
  • 2 tsp pepper
  • 2 tsp salt
  • 2 tbsp garlic powder 
  • 2 cups grapeseed oil (your oil of choice)
  • 2 cups panko (optional)

Instructions
 

  • Rinse the jackfruit, squeeze excess water out each piece. Season with 1 tsp salt, and pepper, 1 tbsp garlic powder. Set aside in a bowl. 
  • Mix all purpose and almond flours together in a medium size bowl.  Add  1 tbsp old bay, 1 tsp salt and pepper, 1 tbsp garlic powder, 1 tsp paprika. 
  • Pour Just Eggs into a medium bowl then add remaining seasonings to create a wet mixture.  Line up side by side with flour mixture and jackfruit. 
  • Prep: take a single piece of jackfruit, dip into flour then into wet mixture, back into flour and place on baking sheet. 
  • Add oil to a medium to large deep pan with oil. Once oil is hot, add jackfruit, cook on both sides evenly until golden brown. Remove, damp to remove with a napkin excess oil. Repeat, serve with desired sauce.
