Banana Nut Bread

Ingredients
  

  • 1 cup All Purpose Flour Recommend, Bob's Red Mill, gluten free flour works as well
  • 1/2 cup almond flour eliminate and additional all purpose flour if there are nut allergies
  • 1 tsp baking powder
  • 1//2 tsp baking soda
  • 1 tsp salt
  • 2 tbsp organic coconut sugar brown sugar works as well
  • coconut cooking spray any spray cooking spray cooking will work
  • 2 ripe bananas
  • 3 tbsp unsweetened apple sauce store bought egg replacement will work too
  • 1 tsp vanilla extract
  • 2 tbsp vegan butter melted
  • 1 tsp coconut oil
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/2 cup raw walnuts optional
  • 1/4 cup oat milk any plant based milk will work

Instructions
 

  • preheat oven 350 degrees F and spray with cooking oil a standard loaf pan ( 8 1/2 2 x 4 1/2 inches or 9x5 inches) I prefer coconut cooking spray
  • In a small bowl, mash bananas with a fork until smooth. place in measuring cup to ensure it is 1 cup mashed. stir in melted butter in bowl with mashed bananas, maple syrup, apple sauce, vanilla extract, and oat milk to create wet b
  • Add all dry ingredients into small bowl and whisk together. with al large spoon to create dry batter.
  • Gradually add dry mix to the wet mix and stir gently, don't over mix. Add in nuts and fold gently to incorporate. Pour into prepared pan, place in center rack of oven and back 50-60 minutes.
  • Let it cool in pan for 10 minutes, then transfer loaf to cooling rack. let the bread cool for 25-30 minutes before slicing without bread crumbling.
