Ingredients
- 1-2 lbs or 2 packages of mirtake musharooms (clusters)mushrooms clusters
- 1 cup all-purpose, unbleached gluten free flour or chickpea flour- Bob’s Redmill
- 2 tbsp cornstarch
- 2 tbsp Old Bay Seasoning
- 2 tsp garlic powder
- 1 tsp onion
- 1 tsp smoked paprika
- 1 tsp Trader Joe’s, Chicken Seasoning
- 1/4 cup vegan broth
- 1 cup panko bread crumbs
- 1-2 cups Grapeseed or Avocado oil
- 1 package burger buns
Instructions
- Heat a cast iron skillet or heavy-duty saucepan low-med heat.
- In a mixing bowl add flour, cornstarch, seasonings, and veggie broth. Stir until batter is smooth. Place panko bread crumbs into a small mixing bowlbowl,
- On a 1/2-sheet pan, lay out all mushrooms in whole clusters; add, if desired salt and pepper to taste. desired,
- Dip each cluster into wet batter, then panko crumbs. Add to a medium-heated pan. Cook for 2-3 minutes., 2-3 at a time, do not crowd the pan. Cook both sides until golden brown.
- Place cooked chicken on a plate with a paper towel or cookie tray to cool. When cool, toss in hot sauce.
- Optional: add coleslaw, lettuce, tomatoes, red onions, or dill pickles to your sandwich.
Notes
SPICY MAYO SAUCE
3 tbsp vegan mayo, Follow Your Heart
1 tsp sriracha
1 /2 tsp ketchup
1/4 tsp garlic powder
In a small bowl, mix together mayonnaise, Sriracha, and garlic powder.
